Buttery cashews and sticky dates rolled into little no-bake bites — a handful of real-food fuel for the mid-afternoon dip.

You'll need

  • 1 cup Olaben roasted cashews
  • 1 cup soft pitted dates
  • 2 tbsp oats
  • 1 tbsp honey (optional)
  • A pinch of sea salt
  • To roll: desiccated coconut or cocoa

Method

  1. Blitz the cashews in a food processor until coarsely ground.
  2. Add the dates, oats, honey and salt, and blend until the mix clumps together.
  3. Roll into small balls, about a tablespoon each.
  4. Roll in coconut or cocoa, then chill for 20 minutes to firm up.

Tip: Too dry? Add a date or two. Too sticky? A few more cashews. Keeps in the fridge for up to a week.
