The salt-sticking problem

Sprinkle salt onto dry roasted cashews and most of it falls off. The salt has nothing to hold onto. There are two ways to fix that, and the first is better.

How to Make Salt-Roasted Cashews (Oven Method)

The brine method (best). Dissolve salt in a little warm water, toss the cashews in it briefly, drain, then roast. As the water evaporates in the oven, it leaves the salt bonded to the surface. This gives even, light seasoning without a greasy coating. Use about 1 teaspoon of salt dissolved in 2 tablespoons of water for 2 cups of cashews.

The oil method. Toss the cashews in a very small amount of oil, then salt. The oil holds the salt but adds fat and calories. Fine, but the brine is cleaner.

The method

  1. Heat oven to 160 to 170°C (325 to 340°F). Low and slow. Cashews burn easily at higher temperatures because of their oil.
  2. Season. Brine or lightly oil the cashews as above.
  3. Spread in a single layer on a lined tray. Crowding steams them instead of roasting.
  4. Roast 12 to 15 minutes, stirring once or twice, until golden. They colour fast at the end, so watch them.
  5. Cool completely. They crisp as they cool; a warm cashew always seems softer than it will be.

Do not walk away

The single most common failure is burning, and it happens in the last few minutes. Cashews go from golden to bitter quickly, and the residual heat keeps cooking them after you take them out, so pull them a shade before they look done. Set a timer, and check at the 12-minute mark.

Flavour variations

Once you have the base, the salt is just the start:

  • Chilli salt: a pinch of chilli flakes or a spicy version, like our spicy cashews
  • Garlic and herb: garlic powder and dried rosemary in the brine
  • Sweet-salty: a whisper of honey with the salt, roasted a touch lower

Storage

Cool completely, then store airtight. They keep about 2 weeks at room temperature, longer in the fridge. Any nut roasted in oil turns rancid faster, which is another reason the brine method wins. In a humid climate, keep them sealed and cool so they hold their crunch.
